Pumpkin cream with goat cheese and caramelized onion

1/2 kg. pumpkin
2 leeks
1 potato
1 green Italian pepper
1 small onion & 2 garlic cloves
4 tbsp extra virgin olive oil (table spoon)

Peal and dice all the ingredients into big cubes.
Heat the oil in a casserole dish and add all the ingredients. Fry lightly for 5 minutes till they become brown.
Add the water (don't cover; you have to see when the water is 1 cm below the level of the vegetables), the salt and simmer for 45-50 minutes.
Once the boilling is finished, use the hand blender to smoothen the mixture until it is creamy.
If you want to get a lighter consistency, you can sieve the mixture through a Chinese colander. Serve either hot or cold with goat cheese and caramelized onion.

  1. Jozu que nivelazo, la Lola se no has hecho internacional.
    Ya sólo falta que nos ponga una receta de arroz explicada en chino mandarín.
    Cuanta cultura hace falta tener para llenar el buche oyes.
