1/2 kg. pumpkin
1 green Italian pepper
1 small onion & 2 garlic cloves
4 tbsp extra virgin olive oil (table spoon)
Peal and dice all the ingredients into big cubes.
Heat the oil in a casserole dish and add all the ingredients. Fry lightly for 5 minutes till they become brown.
Add the water (don't cover; you have to see when the water is 1 cm below the level of the vegetables), the salt and simmer for 45-50 minutes.
Once the boilling is finished, use the hand blender to smoothen the mixture until it is creamy.
If you want to get a lighter consistency, you can sieve the mixture through a Chinese colander. Serve either hot or cold with goat cheese and caramelized onion.
